this fall i was thinking that if i got a couple nice young coon i would try and cook them up.well, the dogs caught a young one on the ground that i thought should be just right.i skin everything in the timber, and when i pulled the hide down, the belly meat came with it.i thought i noticed something moving and when i looked closer,i could see enough worms to choke a horse.i took the twinestring and threw the damn thing high in a cedar tree.i didnt even want my dogs near it.i have a strong stomach but that was too much.no coon for me.

Had a fella from New Orleans tell me his Cajun ex-brother in-law could cook a coon better than anybody he knew. Here is what he said he did:

After skinning, gutting and removing glands, cut coon into quaters.

Put coon in pot of boling water and boil about 15-20 mins
Remove from heat and let cool
Skim off grease that floats to the top
Put back on heat and boil again
Remove and let cool
Skim again and then remove coon and put in fresh water
Boil once more then remove and pull meat off bone
Put in clean pan and mix in bbq sauce and/or whatever seasoning you want.

Make sandwich!

He said the boiling 3 times got all the grease/fat out of it.

Here's how I bbq it:

Boil for an hour in a pot of water, salt, pepper, onion powder, and garlic powder. Pour water off and replace with fresh water and same seasonings. Boil for another hour and pour water off again. Then I marinade it in a vinegar/ red pepper sauce for 8 hrs (Red wine vinegar, red pepper, a little honey). Put on bbq pit and cook. For the last hour, baste with some good ole Carolina Mustard BBQ sauce (my recipe is secret but maurice's or shealy's is good). Had folks who said they would never eat coon and folks who said they didn't like coon try it and love it! The parboiling removes the grease and the meat can actually get dry on the pit! As far as worms go, worms are in the organs, which I have never eaten anyways. Deer can have worms as well, and I'm not gonna stop eating deer either!

I used to coon hunt a lot when I was a teen and I'm getting back into it. I love to eat wild game but was wondering is coon meat even worth messing with when it comes to eatting?

What is the problem with it? Is it gamey or is greasy? Just wondering I would never eat a possum because I've heard there the greasiest thing on God's green earth.
