I've never saw a worm in a coon in 20 years!! Some of the fat kinda looks like worms though.

If boiling the coon would somehow get the grease out then I think it'd be pretty good, I actually like the flavor of coon. I'm religious about cutting the fat off everything I eat, but no matter how good a job I did on that coon it was still like chewing a greasy chunk of lard. I just can't stomach the grease.

Here you go Mr. Howard...

Coon Meat Sausage

Instructions

Things You’ll Need:

* Large bowl
* Aluminum foil
* Broiler pan
* 3 lbs. ground coon meat
* 1 lb. lean ground beef
* 2 cups water
* 1 tsp. onion powder
* ½ tsp. garlic powder
* 4 tsp. ground pepper
* 2 tsp. cayenne or ground red pepper (optional)
* 2 tsp. mustard seeds or mustard powder
* 2 tsp. liquid smoke
* 4 tbsp. salt

Step1
Mix all of the ingredients together thoroughly in a large bowl. Use your hands to mix the ingredients to make sure everything is well blended.

Step2
Form the meat into 2-inch-wide logs about 8 inches long. Pack them very tightly.

Step3
Wrap the sausage logs in aluminum foil, with the shiny side touching the meat.

Step4
Place the wrapped sausage on a large serving platter or plate in the refrigerator. Keep the sausage in the refrigerator for at least 24 hours.

Step5
Remove the sausage from the refrigerator and pierce the aluminum foil in several places with a fork.

Step6
Preheat your oven to 325 degrees.

Step7
Spray the broiler rack of the broiler pan with cooking spray. Bake the coon sausage on the broiler pan for 1½ hours.

Step8
Remove the broiler pan from the oven and unwrap the sausage. Put the unwrapped sausage back onto the broiler rack so the drippings can drain off.

Step9
Wrap the sausage back in aluminum foil after all of the drippings have come off the sausage. Put the sausage in the refrigerator or freezer until you're ready to eat it.

Make sure you remove the glands. one under each fore leg and one each in musle of the rear legs , like cooking chicken with gall bladder intact,

I was always told that some coons carrie a type of worm that won't kill dogs but in humans it can kill you if you don't treat it. Don't know what kind of worm it is but thats always what I've been told.

ReddogNC19, I'd say all these cooking methods have enough cooking time that any worm would be very dead!
Reading these recipes makes me want to try it this winter. Finding those glands is mine biggest worry. Thanks for posting the directions, everyone.

My dad had one rule when you harvested something. you eat it. We pressure cooked coons. not bad but bear was allot better :D :D :D you would have to pay me BIG bucks to eat another Bobcat. I am just glad we just treed Cougars and let them go LOL!!!

put it in the crockpot let it cook till it falls off the bone then get all the bones out then put in a thing of barbeque sause mix it up good let it cook about anothere hour and then put it on a hamberger bun

only way ive ever had it and had it taste good was put it in a pot of slightly salty water par boil and push the meat to the bottom of the pan drain pull it apart like pulled pork and put it in the slow cooker with your favortite bbq sauce and serve with chips and beer

boil it off the bone. chop it up and make it like salmon pattys. i dont like it myself but alot of folks i know love it cooked like this.
