what is the best way to cook a coon?i heard coon hash was the best,how do you make coon hash?any other way i would like to know.

I cook it like I do anything else and how ever you want to try it. Just
make sure you get every bit of fat off you can before you cook it.

Best way I have found I take mine to a place I eat every Thursday and let him cook them for me. I Like it fried best but bbqed is good and pot roast with taters and carrots is also very good

boil it a while till the meat is real stringy season it how you like then pan fry it with some onions just like deer hash

I found this on a website, so I don't know if it's accurate or if it's good. Best of luck.

Coon Hash Recipe
SERVES 6 -8

Ingredients

* 1 raccoon, cleaned and fat removed
* water, enough to cover raccoon
* salt, to taste
* 2 large onions, chopped
* pepper, to taste
* lard or vegetable oil
* red pepper flakes (optional)

Directions

1. Boil raccoon with salt and 1 onion chopped until the raccoon is falling off the bones.
2. Turn off heat and let cool enough to handle. When cooled, remove meat from the bones.
3. In a large skillet, heat oil put in coon,onion,salt and pepper. Sprinkle in red pepper flakes. If coon becomes too dry, add more oil to continue frying. Cook until coon is hashed and browned with some crispy bits.

* the person that posted this recipe also said "It goes great with dry white rice and collard greens."

Here's another recipe from cooks.com ...

A LITTLE SOMETHING EXTRA

1 coon
Salt and pepper to taste
3 cloves minced garlic
1 c. chopped celery
1 chopped green pepper
6 med. sweet potatoes
Vinegar
Water to cover
1 lg. chopped onion
Shortening
Flour

Dress the meat. Soak for 1 hour in mild vinegar and water solution to remove the (gamey) taste: drain. Cut the meat in serving pieces like you would a chicken, salt and pepper the meat cover with water. Add the seasoning and boil until partially tender. Remove from the heat and drain. Brown the meat in a small amount of shortening then place in a roasting pan. Make a thin brown gravy with flour and meat drippings; pour over the meat. Place peeled sweet potatoes around meat and bake at 350 degrees until the potatoes are done.

I have seen many worms in coon. I wouldnt go eatin a coon as long as hambuger is around.

After the recent e-coli, and salmonela(?) scares recently coon don't sound to bad. think I'll wait till cooler wheather though. Always been leary of wild game in summer. And it is illegal to kill'em now, here anyway. Any one ever grind'em for burger or sausage? want any recipes available, please. had it bbq when I was a kid. Don't think it was to bad. 8)
